A cutter for cutting and mixing meat or similar substances, comprising a motor-driven tray (1), which is mounted in the cutter housing so as to be rotatable about a vertical axis (1) and may be covered by a hood, and a set of knives (5) arranged in the tray (1) and mounted on a shaft (6) which projects out of the tray (1), is driven by an electric motor (10) and may be continuously controlled in its rotational speed, characterized in that the shaft (6) is connected without the intermediary of a control drive to the electric motor (10) which is constructed as a direct-current shunt-wound motor and has associated with it a current supply and control circuit (11, 12) which is set in two quadrants for adjusting the rotational speed and for anti-clockwise and clockwise operation of the motor, and in particular in four quadrants for anti-clockwise and clockwise and braking operation of the motor.
