[origin: EP0048241A2] The process relates to the preparation of storable concentration products from raw juice extracts and/or their fermentation residues. To maintain its essential ingredients, calcium ions and/or other cations forming sparingly soluble oxalates are added to this sugar-containing starting material before concentration in an amount corresponding to the stoichiometric proportion of oxalic acid in the starting material, as a result of which the oxalic acid is precipitated as oxalate, after which the material thus treated is concentrated without film formation. The intended source of calcium ions is in particular calcium hydroxide, calcium oxide and calcium chloride. Crystallisation seeds in particular comprising ground calcium oxide, can additionally be added to the starting material.
