[origin: US4404038A] To increase the percentage of crystallized lactose obtained from lactoserum substantially without noticeably increasing investment costs or energy consumption, the first phase of crystallization is effectuated in a continuous crystallization stage wherein seeds of crystallization are added to the lactoserum to initiate crystallization, the lactoserum is concentrated, the concentrated lactoserum is brought to a supersaturated state and maintained at this stage by evaporation to obtain a mixture of mother liquor and lactose crystals, which is subjected to two centrifugal drying stages to obtain a first portion of large lactose crystals and a second portion of such crystals grown by cooling.

L'invention concerne la production de lactose cristallisé à partir de lactosérums. Pour augmenter notablement le pourcentage de lactose récupéré sand augmentation sensible des frais d'investissement et de la consommation d'énergie, l'invention propose de réaliser une première cristallisation dans un appareil de cristallisation par évaporation à marche continue (10), de soumettre le produit sortant de cet appareil à un premier essorage dans une essoreuse à tamis à marche continue (12) pour séparer les gros cristaux de lactose de l'eau-mère, de refroidir (en 14) l'eau-mère contenant des petits cristaux de lactose pour provoquer leur grossissement et à soumettre le produit obtenu à un second essorage (en 16).
