1. Method of obtaining arc-shaped blocks of cheese from a round whole-cheese, whereby the latter is cut beforehand along one or two of its diameters into half-cheeses (M) or quarter-cheeses (M1), characterised in that ring portions are cut from each of these parts and that finally these ring portions are divided into segments by means of radial cuts.

Cet appareil comprend une table (1) horizontale, de forme semi-circulaire destinée à recevoir une demi-meule (M) de fromage, montée à rotation sur un axe vertical (2) cet axe portant un plateau d'entraînement (11) pourvu de crochets (12) coopérant avec un bec (13) porté par un bras (14) actionné par un vérin (15) d'entraînement du plateau pas à pas. La table comporte en outre des fentes semi-circulaires traversées par des lames verticales (4) de découpage de la demi-meule en portions de couronnes concentriques et une lame (9) en forme de guillotine actionnée par un vérin (10) en alternance avec les déplacements pas à pas de la table (1) pour découper lesdites portions de couronnes en secteurs radiaux.
