[origin: EP0122402A2] Grist mill having millstones (7,8), in the consumable millstone areas of which there are air channels (15,15a,15b;16,16a,16b) staggered in the mill stone depth and having an air channel width with respect to the staggering depth such that with progressive using up of the millstones (7,8) air channels (15,15a,15b;16,16a,16b) are always exposed at the milling gap (17) without subsequent ajdustment. An actuating device (12,13,14) for the width of the milling gap (17), a metering device for the milled material, a sieving device (43,44) with a return device (41,46,47) for excessively coarse grist is disclosed. Advantageously, armouring inserts and brush inserts are provided in the mill stones (7,8) and a crushing device can be mounted centrally in the mill stones (7,8) on the axis (1a). <IMAGE>
