Le couvercle (1) articulé en (20) comporte un écran ou réflecteur (10), une enceinte de condensation, des cheminées (21) de communication entre l'enceinte de cuisson et l'enceinte de condensation, des moyens d'évacuation vers l'extérieur pourvus de moyens de filtration à la sortie de l'enceinte de condensation ainsi qu'un moyen d'évacuation de l'eau de condensation. Il comporte également un hublot (37) et un racleur (43-44).
