Abstract (en)

1. Process for cutting off the rim and slicing a wheel of cheese consisting in : - moving forwards the wheel (110) transversely flat with respect to a longitudinal symmetrical axis of the centering station (1) up to center said wheel on said longitudinal symmetrical axis, - centering the wheel (110) on said longitudinal symmetrical axis of the centering station (1) by causing said wheel to transversely slide when two stops (24), which longitudinally extend from each side of said axis, are simultaneously displaced at the same speed towards said axis, the wheel (110) having been previously positionned between the two stops (24), - measuring the diameter of the wheel (110) by means of sensors (30) mounted on stops (24) and coupled to transmitters of measure signals, - drawing aside the stops (24) until they return to the initial position, - measuring the diameter of the wheel (110), - determining along said symmetrical longitudinal axis a common thickness to be provided to the two rims with the same size on purpose to be sliced at right angles to said longitudinal symmetrical axis at the two ends of the wheel (110) as well as an integer and a common thickness of the loins to be cut between the two rims, - determining along the direction at right angles to said symmetrical longitudinal axis a common thickness to be provided to the two rims to be cut in parallel relationship to said longitudinal symmetrical axis at the two ends of each loin on purpose that the latter could be cut into an integer of plates having the same size, - transferring the wheel (110) to a cutting off and slicing station (2) onto the longitudinal symmetrical axis from which the wheel (110) is centered, - locating the wheel (110) with respect to a transverse cutting blade (67) of the cutting off and slicing station, and cutting and then discharging a first rim having the predetermined thickness, - then locating again the wheel (110) with respect to the transverse cutting blade (67) and simultaneously transversely locating two longitudinal cutting off blades (93) at the slicing and cutting off station with respect to the transverse cutting blade (67), - simultaneously cutting a loin by means of the transverse blade (67) and the two end rims by means of the two longitudinal cutting off blades (93), - discharging the cut loin and rims, - carrying again the two previous steps until the predetermined integer of loins have been cut and discharged, and finally - discharging the second rim.

L'installation comporte une centreuse équipée d'un convoyeur sur lequel les meules sont centrées entre deux butées déplacées transversalement et portant des palpeurs de mesure du diamètre des meules. Celles-ci sont ensuite transférées à une tranheuse détalonneuse munie d'un convoyeur de positionnement (47) des meules, d'une lame (67) de coupe des longes, de deux lames (93) de découpe des chutes des longes, et d'un convoyeur d'évacuation (57) des longes coupées. Des vérins (94) sont prévus pour faciliter la manoeuvre des lames, et une cale escamotable, équipée de pointes et d'un vérin de dégagement des pointes, permet de maintenir la meule pour la découpe des quelques dernières longes.
