The mounting device, with knife adjustment, for machines for mincing, cutting and crushing food products or the like, in which the fastening zone (3a, 3b) of the knife (1) is pierced with a substantially rectangular aperture (4), is characterised in that the outer straight edges (5a, 5b) converge towards the tip of the knife (1) and, furthermore, are chamfered in order to interact to fasten the knife when the latter is placed on a drive washer (7) between two segments (9, 10), one (9) fixed on the washer and the other (10) capable of slight movement by means of an off-centred locking member (11, 12). <IMAGE>

Le dispositif de montage avec réglage des couteaux pour machines à hacher, à couper et à broyer des produits alimentaires ou autres dans lequel la zone de fixation (3a, 3b) du couteau (1) est percée d'une ouverture (4) de forme sensiblement rectangulaire, est caractérisé en ce que les bords rectilignes extérieurs (5a, 5b) sont convergents vers la pointe du couteau (1) et de plus chanfreinés de façon à coopérer pour la fixation du couteau lorsque ce dernier est placé sur une rondelle d'entraînement (7) entre deux segments (9, ) l'un fixe (9) sur la rondelle, l'autre légèrement mobile (10), au moyen d'un organe excentré de blocage (11, 12).
