[origin: WO8703453A1] An edible film for retarding water transfer among components of a multicomponent food product. The film includes a base film having a hydrophilic polymer layer and a base film lipid layer. The base film lipid layer has a hydrophobic surface presented away from the hydrophilic polymer layer. An additional lipid layer is laminated to the hydrophobic surface of the base film lipid layer. The invention further includes a method for making the edible film and a food product incorporating it.

Un film comestible permet de retarder le transfert d'eau parmi des ingrédients d'un produit alimentaire constitué de plusieurs ingrédients. Le film comprend une pellicule de base ayant une couche polymère hydrophile et une couche de lipides formant la pellicule de base. La couche de lipides de la pellicule de base possède une surface hydrophobe disposée dans le sens opposé à la couche polymère hydrophile. Une couche supplémentaire à base de lipides est déposée sous la forme d'un stratifié sur la surface hydrophobe de la couche de lipides de la pellicule de base. L'invention décrit également un procédé de production du film comestible et un produit alimentaire l'incorporant.
