[origin: WO8705188A1] An apparatus for removing the heads from fish comprises means (3, 3, 6, 6 and 8) for moving the fish through the apparatus. In order to achieve a flesh-saving cutting of the fish heads the means (3, 3, 6, 6 and 8) for moving the fish through the apparatus are adapted to move the fish with the longitudinal direction thereof extending generally perpendicular to the direction of movement of the moving means. Moreover, the apparatus comprises two rotating circular knives (46, 47), both of which are arranged with their axes of rotation perpendicular to the direction of movement of the moving means. One of the knives (46) is arranged in a plane which is oriented so that a cut is made which extends from the back of the fish and obliquely from the front and rearwardly as seen from the nose of the fish and immediately behind the skull of the head. The other knife (47) is arranged for forming a cut which extends from the ventral side of the fish and obliquely from the front and rearwardly, also as seen from the nose of the fish.

Un appareil, servant à couper les têtes de poisson, comprend un dispositif (3, 3, 6, 6 et 8) destiné à faire avancer le poisson dans l'appareil. Afin de réussir une coupe des têtes sans gaspillage de chair, le dispositf (3, 3, 6, 6 et 8) destiné à faire avancer le poisson dans l'appareil est conçu pour faire avancer le poisson de telle sorte que son sens longitudinal soit généralement perpendiculaire au sens de mouvement du dispositif de déplacement. Ledit appareil comprend en outre deux couteaux circulaires rotatifs (46, 47) ayant tous les deux leur axe de rotation perpendiculaire au sens de mouvement du dispositif de déplacement. Un des couteaux (46) est disposé selon un plan orienté de telle sorte que la coupe effectuée, vue depuis le nez du poisson, s'étend depuis le dos du poisson dans un sens oblique à partir de l'avant vers l'arrière et passe directement derrière le crâne du poisson. L'autre couteau (47) est conçu de manière à effectuer une coupe qui, vue également depuis le nez du poisson, s'étend depuis le côté ventral du poisson dans un sens oblique à partir de l'avant vers l'arrière.
