[origin: EP0278055A2] A baking sheet for baked goods consists of a metal perforated sheet as a support and a polyester fabric placed on top, whose fabric openings have a size of approx. 1 mm<2> and whose open area is approx. 70% of the entire fabric. Such a baking sheet allows heat insulation which is only minimum in total so that the shaped dough pieces are very rapidly cooled or heated, by the fact that an air circulation originates, on the one hand, by the openings in the perforated sheet and, on the other hand, by the pores, or passages, in the air-permeable polyester fabric. Moreover, the surface of the top layer, which is not even, causes the shaped dough piece to rest on the sheet by means of a, so to speak, multi-point support, which, together with the rapid heating, essentially prevents the formation of moisture and dew effects and of signs of sticking. Even highest demands as far as hygiene is concerned are met by the materials selected according to the invention, since the entire baking sheet can be cleaned simply and thoroughly.
