[origin: EP0288024A2] The cutter knife consists of a semicircular attachment section (1) with two alignment bores (3) and a sickle-shaped knife blade (5). The cutting edge (6) is arcuate. For this reason the blade can be ground on automatic grinding machines. For knives for the manufacture of broth sausage, the bending radius (A) of the cutting edge (6) and the radial spacing (B) of the centre of bending (M) are selected in such a way that the cutting angle ( alpha ) over the entire length of the cutting edge (6) is approximately 55 DEG . For knives for manufacturing raw sausage filling the bending radius (A) and radial spacing (B) are, on the other hand, selected in such a way that the cutting angle increases with the cutting radius from approximately 35 DEG to approximately 75 DEG . <IMAGE>
