Process for improving the pressing of pulp from the sugar industry by an enzyme treatment, and a plant for implementing this process. To optimise the enzyme treatment and thus to produce appreciable energy savings in the pressing and possibly the drying of the pulp, the pulp and the dilute enzymes are delivered continuously to the suction orifice of a pump (14) capable of mixing the pulp and the enzymes and conveying them to a storage area (16), the pulp is stockpiled in a heap and is allowed to remain in this area for 4 to 5 hours and the pulp piled up in the area is removed again to be pressed (at 32). <IMAGE>

L'invention a pour objet un procédé pour améliorer le pressage des pulpes de sucrerie par un traitement enzymatique, et une installation pour la mise en oeuvre de ce procédé. Pour optimiser le traitement enzymatique et réaliser ainsi des économies d'énergie appréciables sur le pressage et éventuellement le séchage des pulpes, on amène en continu les pulpes et les enzymes diluées à l'orifice d'aspiration d'une pompe (14) apte à mélanger les pulpes et les enzymes et à les transporter jusqu'à une aire de stockage (16), on stocke les pulpes en tas et on les laisse séjourner pendant 4 à 5 heures sur cette aire et on reprend les pulpes entassées sur l'aire pour les presser (en 32).
