[origin: WO8810303A1] Novel proteinacious sweeteners are provided comprising an amino acid sequence based on the sequences of monellin subunits. The single protein may be prepared by recombinant techniques, to provide for a stable strong sweetening agent, which may be utilized in a wide variety of contexts.
