[origin: WO8901299A1] In order to produce a juicy pulp from fruit, berries and/or vegetables, the raw material, that can be composed of the whole fruit, is first comminuted in a comminution device (1), then pressed out with a press (2). The press (2) presses out together with the juice extracted from the raw material a high content of precious cellulosic material. A visquous juicy paste is thus obtained that is further processed for upgrading purposes, for example for producing a clear juice, by a cross-flow filtration device (7) linked to the press (2). This process considerably improves the quality of the upgraded products, the economic viability of the installation and the yield, specially when implemented in connection with a recycling press (4) associated with the press (2).

Zur Gewinnung von Saftbrei aus Früchten, Beeren und/oder Gemüsen wird das Rohmaterial, das aus ganzen Früchten bestehen kann, zuerst in einer Zerkleinerungseinrichtung (1) zerkleinert und anschliessend mit Hilfe einer Presse (2) ausgepresst. Die Presse (2) ist so Konstruiert, daß zusammen mit dem vom Rohmaterial getrennten Saft ein hoher Bestandteil an wertvollem Zellmaterial abgepreßt wird. Dadurch entsteht ein viskoser Saftbrei, der anschließend zu Veredelungszwecken, beispielsweise zur Herstellung von Klarsaft, in einer sich an die Presse (2) anschliessenden Querstromfiltrationseinrichtung (7) weiterverarbeitet wird. Durch das erfindungsgemässe Verfahren werden die Qualität der Veredelungsprodukte sowie die Wirtschaftlichkeit der Anlage und die Ausbeute, insbesondere in Verbindung mit einer der Presse (2) zugeordneten Recyclingpresse (4) erheblich verbessert. Pour l'extraction de purée de fruits, de baies et/ou de légumes la matière première, qui peut être entièrement constituée par des fruits, est premièrement réduite en petits morceaux par un dispositif et ensuite pressurée par une presse (2). La presse (2) est construite de manière à extraire avec le jus séparé de la matière première une grande partie de matière cellulosique de grande valeur. De cette façon on obtient une purée base de produit amélioré, par exemple pour la fabrication de jus clair, qui est transformée dans un dispositif de filtration (7) relié à la presse (2). Par le procédé selon l'invention la qualité du produit, ainsi que le rendement de l'installation et la production sont considérablement améliorés, notamment par la liaison d'une presse de recyclage avec la presse (2).
