[origin: EP0363282A1] The invention relates to an ejection device for a beet slicer employed in the sugar industry, employing the projection of a jet of compressible fluid under pressure. The device comprises a nozzle (2) for injecting fluid, arranged on the static part (3) of the apparatus and pointing in the direction of the trajectory followed by the knives. This nozzle fed with fluid at a predetermined pressure, temperature and flow rate is characterised in that its profile is determined so as to ensure the isentropic pressure release of the fluid to a pressure close to the surrounding downstream pressure. <IMAGE>
