L'invention concerne la fermentation continue multi-étagée d'un milieu inoculé par des microorganismes du type bactérie ou levure. Selon le procédé chaque étage de fermentation dispose d'un système de rétention des microorganismes. On réalise un transfert continu ou temporisé de la biomasse d'un étage de fermentation à l'étage suivant; ou le volume de chaque étage de fermentation, et du premier en particulier, est tel que pour le débit nominal de fonctionnement du système de fermentation, la concentration critique de métabolite ne puisse être atteinte. Application à la production d'anhydride carbonique et d'éthanol.
