Abstract (en)
To cut sausage or sausage-like meat products into slices, an axial pressure and a radial pressure are exerted synchronously on the product (10). In the state thus stabilised, slice after slice is cut off from the product (10) with the aid of a rotating cutter (1) without a notable deformation of the product (10) being able to occur due to the surface pressure of the cutting edge (4) of the cutter (1), which would impair the dimensional accuracy of the resulting slices.

Zum Schneiden von Wurst oder wurstförmigen Fleischwaren in Scheiben wird auf das Gutsstück (10) synchron ein Axialdruck und ein Radialdruck ausgeübt. In dem so stabilisierten Zustand wird von dem Gutsstück (10) mit Hilfe eines rotierenden Messers (1) Scheibe für Scheibe abgeschnitten, ohne daß durch die Flächenpressung der Schneide (4) des Messers (1) eine nennenswerte Verformung des Gutsstücks (10) eintreten kann, welche die Formgenauigkeit der anfallenden Scheiben beeinträchtigen würde.
