[origin: EP0350379A1] In a process for extracting cholesterol from an animal fat, an aqueous saline solution containing a bile salt and one or more glycerol esters is added to the anhydrous animal fat and a fine emulsion is formed. The mixture is decanted, and the aqueous phase containing the cholesterol extract is drawn off. If necessary, the above operations are repeated. The anhydrous fat obtained by the process is also described. Applications: manufacture of low-cholesterol anhydrous fats.

La présente invention concerne un procédé d'extraction du cholestérol d'une matière grasse animale consistant à: ajouter à la matière grasse anhydre une solution aqueuse saline contenant un sel biliaire et un ou plusieurs esters de glycérol, former une émulsion fine, décanter le mélange, séparer la phase aqueuse contenant le cholestérol extrait, éventuellement répéter les différentes opérations. La présente invention concerne également la matière grasse anhydre obtenue par ledit procédé. Applications: fabrication de matières grasses anhydres appauvries en cholestérol.
