Die Erfindung betrifft eine Scheibenschneidemaschine, insbesondere für knollenförmige Gemüse oder Erdfrüchte, mit einem drehbar in einem Rotationsgehäuse (10) gelagerten Rotor, der das Schneidgut in Drehrichtung (11) mitnimmt und dabei gegen die Innenwandung des Rotationsgehäuses (10) preßt, das über einen Umfangsabschnitt durch eine Klappe (7) gebildet ist, die - bezogen auf die Drehrichtung (11) des Rotors - an ihrem vorderen Ende verschwenkbar gelagert ist und in Öffnungsstellung mit ihrem hinteren Ende gegenüber einem ortsfest angeordneten Messer (9) einen die Schnittdicke definierenden Schnittspalt (12) begrenzt, zu dessen Veränderung eine die Klappe (7) verschwenkende Verstelleinrichtung (1 - 6 ) vorgesehen ist. Erfindungsgemäß wird vorgesehen eine durch eine federelastische, die Klappe (7) in zunehmende Öffnungsstellung verschwenkende Einrichtung (8) und durch einen manuell verdrehbaren, die Klappe (7) gegen die Wirkung der federelastischen Einrichtung (8) beaufschlagenden Exzenter (1).
