[origin: EP0434853A1] In an apparatus for portioning food products, especially cheese, a supporting table (1) is provided on which the piece (2) to be cut up is fed. A knife blade (5) is held so as to be displaceable transversely to the feed direction of the piece (2) to be cut up. For this purpose, the knife blade (5) is arranged on a carrier (4) performing the cutting-stroke movement (3). The knife blade (5) is held in an angularly adjustable manner on this carrier (4) and can therefore be aligned parallel or at an acute angle in relation to the stroke plane of the carrier (4) and thus in relation to the plane of section of the piece (2) to be cut up. As a result, the knife blade (5) can be pivoted into the positions (5' and 5''). It is thus possible to achieve equilibrium of forces during the cutting guidance owing to the knife blade, so that bending of the knife blade (5), especially during the severing of the endpieces (7, 9), is prevented. <IMAGE>
