For freezing and freeze-drying the product, a freeze-drying apparatus (1) is used, which has a freeze-drying chamber (2) with receiving surfaces (6) for carrying out the freeze-drying and a condenser (11), the cold surfaces of which are formed by a coiled pipe (14) with a number of pipe loops (15) and the cold produced by the condenser (11) being used for freezing the product; in order to be able to carry out freezing quickly and simply, it is proposed that the product is situated in bowls (21) and that these bowls are placed on the pipe loops (15) of the condenser (11) which is operating. <IMAGE>

Zum Einfrieren und Gefriertrocknen des Produktes wi eine Gefriertrocknungseinrichtung (1) verwendet, die eine Gefriertrocknungskammer (2) mit Stellflächen (6) zur Durchführung der Gefriertrocknung und einen Kondensator (11) aufweist, dessen Kaltflächen von einer Rohrschlange (14) mit mehreren Rohrschleifen (15) gebildet werden und wobei die vom Kondensator (11) erzeugte Kälte für das Einfrieren des Produktes verwendet wird; um das Einfrieren schnell und einfach durchführen zu können, wird vorgeschlagen, daß sich das Produkt in Schalen (21) befindet und daß diese Schalen auf die Rohrschleifen (15) des in Betrieb befindlichen Kondensators (11) aufgesetzt werden. <IMAGE>
