[origin: WO9105846A1] A process is disclosed for producing wine without adding sulphurous products. Must is extracted in the usual way from pressed grapes, if necessary the must is slimed or clarified and fermenting is started if necessary by heating the must and/or by adding yeast and/or by mixing it with already fermenting must, then the fermented product is further processed without being exposed to air. In order to avoid browning or oxidation of the wine during or after fermentation, starch-containing products such as products from grape kernels, preferably powdered grape kernels and grape components with anti-oxidative properties, preferably anthocyanine and/or anthocyanogene, are added to the must instead of sulfurous products.

Selon un procédé de production de vin sans adjonction de produits sulfureux, on extrait de manière classique le moût de raisins pressés, on procède le cas échéant à une démucilagination ou clarification de ce moût, puis on le fait fermenter, par chauffage du moût et/ou par adjonction de levure et/ou en le mélangeant avec du moût déjà en train de fermenter, et le produit fermenté est ultérieurement traité sans être exposé à l'air. Afin d'éviter le brunissement ou l'oxydation pendant ou après la fermentation, on ajoute au moût au lieu de produits sulfureux des produits riches en amidon tels que des produits de pépins de raisin, de préférence de la farine de pépins de raisin et des composants de raisins à effet anti-oxydant, de préférence de l'anthocyanine et/ou de l'anthocyanogène.
