[origin: WO9107904A1] The invention concerns the continuous cleaning of utility crockery in a commercial dish-washing machine with a washing zone and a subsequent rinsing zone, an increased cleaning-agent concentration being used in at least some areas in the washing liquor. The aim of the invention is to increase cleaning performance without increasing overall cleaning-agent consumption and without the need for very highly concentrated cleaning-agent solutions. This aim is achieved by the process of the invention by virtue of the fact that a major part of the washing-solution flow is taken from the last tank and fed directly into the third from last tank and/or a tank further upstream, the amount taken being more than 50 %, preferably more than 75 %, of the amount of fresh water running into the last tank. The remaining washing solution is passed through the tanks, at least from the middle and/or penultimate tank on, in cascade. In at least the middle and/or penultimate tank, the cleaning-agent concentration in the washing solution is increased by at the most the same factor as the ratio of the fresh-water flow to the remaining washing-solution flow, the addition of cleaning agent being made into this/these tank(s) only.
