[origin: EP0508418A1] An oil and fat composition for food processing machines comprises polyglycerides of medium chain saturated fatty acids and/or mixed polyglycerides of medium chain saturated fatty acids and long chain saturated fatty acids and, optionally, triglycerides of medium chain saturated fatty acids. The composition is safe for food sanitation, has excellent oxidation stability and lubricating property and a suitable degree of viscosity and cloud point as well as a high viscosity and a low temperature fluidity which cannot be attained by MCT and is favorably utilized as lubricating oil for food processing machines and tools and agricultural machines and tools.
