Device for collecting must applied to a horizontal fruit press (1) comprising a cylindrical vessel (1) whose semi-cylindrical upper part (10) is sealed and whose semi-cylindrical lower part (11) is perforated. This device is substantially semi-cylindrical and formed by two quarter-cylindrical half-collectors (2, 3) fastened bilaterally to the said vessel (1) at the level of the border between its upper part (10) and its lower part (11) so as to be able to open or to close over the lower part (11) through the effect of jacks (20, 30) whose rods are applied on the said half-collectors (2, 3) not far from their joining line, each half-collector (2, 3) comprising, on the inside, on each of its two longitudinal edges, a channel (22, 23) and (32, 33), respectively, one (22, 32) of which, near the joining line of the two half-collectors (2, 3), is extended at one of its ends by a discharge pipe (21, 31), the assembly being covered by a membrane (24, 34) fastened in a sealed manner on the edges of the said half-collector (2, 3) and in which an opening is provided for the discharge pipe (21, 31). <IMAGE>
