[origin: WO9119976A1] A device (1) to aid in determining tenderness of meat. The device (1) includes a body (2) which supports a load cell (6) and an elongated probe (4). The probe (4) has a leading tip (5) provided with four tip pins (16) which engage the meat and provide resistance to movement of the probe (4) through the meat sample. The four supplied to the probe (4) is registered by the load cell (6) that produces a signal indicative of the force. Surrounding the probe (4) and slidably mounted in the body (2) is a piston (3) wich is movable from a forward position to a tracted position exposing a greater length of the probe (4). The forward end of the piston (3) is provided with prongs (8) which aid in locating and securing the device (1) in the correct position with respect to the meat sample.

Dispositif (1) destiné à évaluer la tendreté de la viande. Ce dispositif (1) comprend un corps (2) soutenant un dynamomètre (6) et une sonde allongée (4). La sonde (4) possède une extrémité avant (5) pourvue de quatre pointes d'extrémité (16) qui agrippent la viande et opposent une résistance au mouvement de la sonde (4) à travers l'échantillon de viande. La force appliquée à la sonde (4) est enregistrée par le dynamomètre (6), qui produit un signal indicatif de cette force. Un piston (3) entourant la sonde (4) et monté de manière coulissante dans le corps (2) peut être déplacé d'une position avant à une position en retrait exposant une plus grande partie de la sonde (4). L'extrémité avant du piston (3) est dotée de fourches (8) qui permettent de placer et de fixer le dispositif (1) dans la position correcte par rapport à l'échantillon de viande.
