Abstract (en)
A method for removing sterols, especially cholesterol, from or enriching sterols in vegetable and animal fats is described and entails the sterol-containing fat being mixed with a hydrocarbon/alcohol/water mixture and subsequently the two phases which are formed being separated. The hydrocarbon-rich phase essentially contains the fat freed of sterols, whereas the sterols are dissolved in the alcohol-rich phase. This method is preferably carried out continuously as countercurrent extraction. <IMAGE>

Beschrieben wird ein Verfahren zur Abtrennung von Sterinen, insbesondere Cholesterin, aus bzw. Anreicherung von Sterinen in vegetabilischen und tierischen Fetten, bei dem das sterinhaltige Fett mit einem Kohlenwasserstoff/Alkohol/Wasser-Gemisch gemischt wird und anschließend die beiden sich bildenden Phasen getrennt werden. Dabei enthält die kohlenwasserstoffreiche Phase im wesentlichen das von Sterinen befreite Fett, während in der alkoholreichen Phase die Sterine gelöst sind. Vorzugsweise wird dieses Verfahren kontinuierlich als Gegenstromextraktion durchgeführt. <IMAGE>
