The invention relates to plants for the recrystallisation of sugar in which it is necessary to remelt the crystals and particularly to sugarhouses, refineries or sugarhouses-refineries in which the remelted sugar liquor is used either directly or mixed with other products as product to be crystallised. In order to produce high Brix liquors and, for this reason, to reduce the heat consumption of the crystallisation plant and to improve the quality of the sugar by reducing the risks of coloration (colouring), a massecuite is introduced into a chamber (14), one wall of which consists of a filtering surface (20), the mother liquor is separated by filtration from the crystals of the massecuite and the said chamber is supplied with a liquid capable of dissolving the crystals until the latter have completely dissolved, the liquor obtained being discharged through the filtering surface. <IMAGE>

L'invention concerne les ateliers de cristallisation du sucre dans lesquels une refonte des cristaux est nécessaire, et particulièrement les ateliers de sucreries, raffineries ou sucreries-raffineries dans lesquels la liqueur de sucre refondu est utilisée, soit directement, soit en mélange avec d'autres produits, comme produit à cristalliser. Pour produire des liqueurs à brix élevé et, de ce fait, diminuer la consommation thermique de l'atelier de cristallisation, et améliorer la qualité du sucre en diminuant les risques de coloration, on introduit une masse-cuite dans une chambre (14) dont une paroi est constituée par une surface filtrante (20), on sépare par filtration la liqueur-mère des cristaux de la masse-cuite, et on alimente ladite chambre avec un liquide apte à dissoudre les cristaux jusqu'à dissolution complète de ceux-ci, la liqueur obtenue étant évacuée à travers la surface filtrante. <IMAGE>
