Abstract (en)

[origin: EP0742998A1] The method for eliminating by pressing the whey contained in curd (3) located in a micro-perforated cheese mould (2) consists of placing the cheese mould in a sealed enclosure (1). Two pressing cycles are made, each comprising a first phase in which a pressure is exerted on the curd contained in the mould, and a depression created in the enclosure. In the second phase the pressure exerted on the curd is ended and a pressure created in the enclosure equal to atmospheric pressure. Each pressing cycle has a duration of about 30 minutes and can be repeated up to ten times according to the nature of the whey. During the second phase the high pressure in the enclosure is less than or equal to 10<4> Pa during the second phase
