The heat content and the moisture content of the drying air can be controlled, wherein the moisture content of the drying air circulating in the chamber (2) is controlled by ventilation and the drying air is cooled by and condenses on one or more cooling surfaces (11) disposed in the chamber as the air passes in contact with said surfaces, these surfaces being cooled by replacement air which enters the chamber (2) from outside the chamber.
