[origin: WO9637518A1] Method for extracting and producing hydrocolloidal polymers from animal or plant material, including the steps of comminuting (2) the animal or plant material (4) to a given particle size and diluting (5) it in water in a ratio dependent upon the material; continuously circulating (1) the diluted material in heating pipes (16) at a given temperature, the maximum dimension of the internal cross-section of the pipes being selected so as to provide a uniform temperature throughout and a suitable circulation rate; heating (1) the diluted material so that the hydrocolloidal polymers dissolve in the water, during a minimum residence time in said pipes (16); and separating (9) the residual material (10) from the liquor containing the polymers which are then concentrated (13, 14) by any suitable technique.
