[origin: EP0789198A2] The method is used to provide air conditioning for a treatment room (4,4',4") for biological products, which may be cheese, and blows conditioned air (21) into the room at a predetermined temperature, speed, and humidity. Air (28) is also removed from the room. Conditioned air passes through the room uniformly over largely its whole cross-section, in a displacing current (22) which is free from turbulence. The air may pass through the room horizontally, and the biological products may be aligned with their smaller surfaces perpendicular to the flow. The products may also be mounted on racks with horizontal bearing surfaces which are arranged one above another in the treatment room.
