The oven has a blower (16) and the spray nozzle (14) is arranged in the suction area (18) or in the pressure area (19) of the blower. The spray nozzle is fitted in the ceiling of the oven chamber (12) and via a bayonet-type closure coupling (20) is couplable to a static connection. The spray nozzle is couplable to a spray tube which, via a valve control, is selectively connectable with a water connection (24) or a reservoir (26) for cleaning medium. The spray tube (22) is formed as a mist-forming tube (60), and can selectively accommodate a spray nozzle or a mist-forming nozzle (64).

Es werden ein Ofen zur Wärmebehandung von Lebensmitteln und ein Verfahren zur Reinigung eines Ofenraums angegeben, wobei ein flüssiges Reinigungsmittel über eine Sprühdüse (14) in den Ofenraum (12) zur Reinigung eingesprüht wird. Die Sprühdüse (14) ist vorzugsweise im Druckbereich (19) eines Gebläses (16) angeordnet, das während des Einsprühens der Reinigungsflüssigkeit und während des nachfolgenden Reinigungsschrittes bei erhöhter Temperatur im Bereich von etwa 40 - 60°C läuft, um eine gleichmäßige Verteilung des Reinigungsmittels im Ofenraum (12) und eine intensive Reinigung zu ermöglichen. <IMAGE>
