Abstract (en)

[origin: EP0806144A2] Process for preparing a liquid or pasty biological leavening agent for a baked product comprises: (i) adding at least one amylase and at least one amyloglucosoidase to a mixture of cereal raw material and brewer's yeast extract; (ii) heating the medium for 10-30 minutes at 50-80 degrees C; (iii) cooling to 55 degrees C; (iv) adding at least 2 proteases and maintaining the same temperature for 30 minutes to 4 hours; and subsequently (v) carrying out sterilisation and fermentation to give the leavening agent, using one or more strains of lactic acid bacteria.
