Abstract (en)
[origin: EP0838181A2] The plant is generally flat and has a pan (14) for the foodstuff to which is assigned a cooling air system, the air going under the pan and coming back over it. The pan is also designed for ice to be embedded in the foodstuff either directly or in containers. The air system has an air channel (22) which surrounds the pan at least on two opposite sides and below it. On the upper edge of the pan on one of the sides is an air outlet (24) and on the other is an air inlet (26). The channel is formed between a housing (12) open to the top and the pan which is inside it, spaced away on all sides and at the bottom.
