[origin: FR2737467A1] A preservation and packaging method, particularly for food products in a sealed and transportable container which can be kept at room temperature or at a controlled temperature is described, wherein all the vitamins, trace elements, mineral salts and enzymes contained in the food products prior to the heat treatment thereof are preserved. The inner volume of container (10) is partially evacuated before it is sealed, such that the partial vacuum lowers the boiling and/or melting point of the products during the heating phase of the heat treatment. A semi-rigid or flexible plastic material is used for the container, the volume of air remaining in the sealed volume allowing for the deformation of the plastic container so as to balance outer and inner pressures during the temperature rise of the heat treatment.
