Abstract (en)
The method involves packing the foodstuff (17) against the walls of a mould (13) with sufficient force to make it adapt to the shape of the container walls but without destroying the structure of the foodstuff. The mould can be a container (13) which is disposed of after use and may be made in the shape of part of a fish, e.g. a cutlet or fillet or have a surface moulding in a similar shape. The foodstuff used to fill the mould can incorporate a moisture-retaining substance. Once the mould has been filled the product can be covered by a seal (11).

La présente invention se rapporte à un procédé de dosage et/ou formage d'aliments, notamment à base de chair de poisson et/ou de crustacé, à l'aliment obtenu par ledit procédé et au conditionnement susceptible d'être mis en oeuvre par ledit procédé. Selon la présente invention, on effectue le dosage d'un aliment (12) à base de chair de poisson et/ou de crustacé dans un récipient (13) qui, lors de la dépose du produit, est suffisamment rigide pour conférer la forme désirée à l'aliment. La présente invention s'applique notamment à l'industrie alimentaire. La présente invention s'applique principalement à la transformation de poisson. <IMAGE>
