Abstract (en)
[origin: EP0854087A1] The method involves packing the foodstuff (17) against the walls of a mould (13) with sufficient force to make it adapt to the shape of the container walls but without destroying the structure of the foodstuff. The mould can be a container (13) which is disposed of after use and may be made in the shape of part of a fish, e.g. a cutlet or fillet or have a surface moulding in a similar shape. The foodstuff used to fill the mould can incorporate a moisture-retaining substance. Once the mould has been filled the product can be covered by a seal (11).
