[origin: GB2307650A] Cooking oil / fat filtering apparatus comprises two filters 5, 11 in series with a pump 9. The hot oil is pumped at pressure from the fryer 1 to the first filter 5 where large particles are removed, to the second filter 11 where smaller contaminants are removed, and then either returned to the fryer, or to a separate holding tank. Preferably, the first filter 5 comprises a removable stainless steel gauze filter cartridge 6, within a housing 15, while the second filter 11 comprises a removable filter cartridge 12 made from closely wound wood pulp fibre, e.g. a roll of paper, within a housing 16. The first filter may remove particles above 80 microns, while the second removes particles down to 2 microns. A heating unit 20 may be included to melt any coagulated fat present in the system before start-up. The apparatus may be integral with the fryer, or may be separate, utilising a wand or lance to draw contaminated oil from the fryer.
