[origin: WO9749298A1] A pectinaceous gelling agent obtained from vegetable matter which contains pectinaceous substances having a degree of esterification of less than 50 %. The gelling agent contains 20 % to 50 % by weight of galacturonic acid and has a degree of esterification of 5 % to 20 %. The gelling agent may be prepared from waste vegetable matter by alkaline or acid extraction.
