[origin: EP0908297A1] Following a first mixing phase of the materials to be pressed by rotating the vat without applying pressure or applying a pressure (Po) the instantaneous flow rate of the juice (Dit) is measured. The quantity of recovered juice (Qjt) as a function of time (t) since the start of mixing is measured. Following a second mixing phase a second phase of consecutive measurement whilst applying a pressure (Po) or without applying the pressure is compared with the previous values and verified when the inequality Dit ≤ Qjt/t is attained.
