The arrangement has at least one air channel (5) for the extraction of cooling air and steam, with at least a first flow connection for the extraction of a steam-air flow from the baking muffle and at least a second flow connection for extricating a cooling air flow for the external surroundings of the muffle. The motor (4) drives both a first fan wheel (11) for the cooling air flow and a second fan wheel (12) for the steam-air flow (7).

Es wird eine Vorrichtung zum Belüften eines Backofens mit Backmuffel (3) angegeben, bei dem die Kühlung und der Abzug von Wrasen aus der Backmuffel (3) über einen Luftkanal (5) durchgeführt wird, an dem mindestens eine erste Strömungsverbindung für den Abzug des Wrasenluftstroms (7) aus der Backmuffel (3) und mindestens eine zweite Strömungsverbindung (8) für den Abzug eines Kühlluftstroms für die Außenumgebung der Backmuffel (3) ausgebildet sind, wobei zum Antrieb der jeweiligen Lüfterräder (11,12) lediglich ein einziger Motor (4) vorgesehen ist. <IMAGE>
