[origin: WO9803076A1] The present invention provides encapsulated sensitive active ingredients, such as aspartame, and chewing gum including same. Pursuant to the present invention, a sensitive active ingredient, such as aspartame, that is coated with polyvinyl acetate, is coated with a second coating of zein. The zein coating protects the polyvinyl acetate encapsulation thereby protecting the sensitive active ingredient from degradation.
