[origin: WO9824331A1] According to the invention, at least one enzyme (5) is added to a juice (3) consisting of fruit and/or vegetable juice in order to break down solids particles present in said juice. The resultant mixture (6) is clarified by at least one filtration process so that a clear, solids-free juice fraction (21) is produced which contains dissolved juice components, for example sugar, acids, vitamins and aromatic substances. The juice fraction (21) is filtered by means of a first membrane filter (32), that is a reverse osmosis filter. The resultant first retentate (33) is filtered by means of a second membrane filter (45), that is a nano filter, such that a second retentate (46) is produced. The juice fraction (21) is highly concentrated in a gentle manner by the gradual filtration processes using the two membrane filters (32, 45) at low temperatures. Formed from the second retentate (46) is a highly concentrated high-quality juice concentrate (47) which contains all the substances dissolved in the juice (3) and in the juice fraction (21) in a practically unchanged state and in at least approximately the same proportions as in the clear juice fraction (21).
