Abstract (en)
The oven uses steam produced by water sprayed onto heating elements. It has a chamber enclosed by a peripheral wall and a door, an air circulating turbine (4) driven about a horizontal axis (5) and having peripheral vanes (6) to draw in an air flow (16), and a water feed (12). The water to generate the steam is distributed through the horizontal end (14) of the feed pipe parallel to the turbine axis and in a direction opposite to that of the suction air flow. The pipe end has at least one lengthwise outlet slit (21) in its side, with the water from it being deflected by a distribution plate (22) into the airflow.

Dans le four selon l'invention, l'air est aspiré selon un courant central d'aspiration (16) par une turbine (4) cylindrique et est refoulé radialement en périphérie vers des éléments chauffants (9). De l'eau est amenée par une canalisation d'entrée (12) dans l'intérieur de la turbine (4), et est répartie selon la profondeur (P) de la turbine (4) par une structure de répartition comportant un tronçon d'extrémité (14) de canalisation muni d'une fente latérale (21) et d'une plaque de répartition (22) inclinée fixe. L'invention s'applique aux fours à vapeur pour la cuisson d'aliments, et permet une bonne répartition de l'eau sur tous les éléments chauffants (9) pour sa vaporisation. <IMAGE>
