[origin: DE19817275C1] A sugar centrifugation process comprises spraying a liquid onto the sugar layer on the centrifuge drum wall and withdrawing the liquid mist from near the spraying region. In a (preferably continuously operating) sugar centrifugation process, in which the sugar is cleaned by spraying a liquid preferably water onto the sugar layer on the inner wall of the centrifuge drum, the non-absorbed deflected liquid mist is sucked away from the immediate neighborhood of the spraying region and withdrawn from the drum interior. An Independent claim is also included for an apparatus for carrying out the above process, comprising a water spray nozzle head (4) and an adjacent suction system (6 - 8) for suction of the non-absorbed deflected liquid mist (9). Preferred Features: Suction is effected by the ejector nozzle principle using a suction head (6) which is mounted on top of the nozzle head (4) and which is connected by a hose (7) to a suction fan (8). The suction head (6) is part of a steam jet pump.
