[origin: WO9825474A1] An endless wafer strip (4) made of wafer dough, which is elastically deformable when hot, is baked on a rotating baking surface (3). Said strip is removed from the hot baking surface (3) at a given level of removal (5). It is then wound in a lower-lying slot (10) of a winding device (9) placed diagonally to the track of the wafer strip between two winding members (11, 12) rotating in opposite directions. The strip is wound around a winding member (11) which is embodied as a mandrel. Winding occurs in a spiral and involves overlapping with a continuous sheath-like hollow form that is cut into sections of individual wafer rolls which become crusty and dry when cooled. In the start phase of the manufacturing process, the beginning of the baked wafer strip (4) is released downwards by gravity from the level of removal (5) to the winding members (11, 12) and is pushed into the winding slot (10) by at least one of the winding members. The devices involve a baking machine (64, 72), wherein each winding device (68, 78, 79) is provided with a threading device, and a winding device that is provided with a threading device.
