Abstract (en)
[origin: WO9846949A1] In a method and a plant for cooling a nutrient, especially jam containing whole berries in heat treated (e.g. 85 DEG C) jam (strawberry jam), and in which the nutrient, prior to the cooling, in hot condition is packed into packages (16) which, thereafter, are sealed air-tightly, forming the heat treated and cooled, wholly or in part prepared nutrient's storage containers during storage, one has aimed at obtaining an increased efficiency and, thus, a shortening of the cooling, which is tantamount to an improved product quality, as well as a uniform distribution of the berries within the jam. The filled packages (16) are placed in hollow drums (4) which are mutually articulated and displaced as an endless chain along an oval path in a vertical plane. The lower drum-chain part is immersed in the cooling fluid (3) while the drums (4) are rotated, the jam in the packages being overturned during the cooling process.
