[origin: EP0991299A2] The electric cooking system has a cooking plate body (5) for heating a cooking pan, provided with a central heating element (17) and a peripheral heating element (21) on its underside, each having an associated temperature sensor. Both temperature sensors and both heating elements are coupled to a control unit (25), for providing a defined temperature expansion gradient between the centre and the outside of the cooking plate body, causing curvature of the upper side of the latter for reducing the relative spacing from the underside of the cooking pan. An Independent claim for an operating method for an electric cooking system is also included.
